TREAT IDEAS…

Tropical Immune Boosters

Ingredients

Prep 20 mins plus chilling

  • 140g dried mango

  • 30g goji berries

  • 140g cashew nuts

  • 60g desiccated coconut (and some for rolling)

  • 1 tbsp baobab powder (I didn’t have any so didn’t add)

  • 1 and ¼ teaspoon turmeric powder

  • 1 tsp rosehip powder (I didn’t have any so didn’t add this)

  • Juice and zest of 1 lime

1)    Place all ingredients in food processor and pulse until finely chopped (I used a nutribullet – advise to pulse the nuts first on their own before you add the other stuff to blitz).

2)    Add a little cold water 2-4 tablespoons to enable the mixture to come together so you can make balls.

3)    Divide into balls and roll on a plate of coconut.

4)    Place in fridge for an hour.

I add a couple of teaspoons of Maple syrup too – as the turmeric was a little bitter but that’s a taste thing.

  

Choc Chia Cookies

Ingredients

  • 10 dates. (chopped up)

  • 2 tablespoons raw cacao powder

  • 2 Tablespoons chia seeds

  • 1 Tablespoon chopped hazelnuts (optional)

  • 2 cups almond flour

  • 2 tablespoons coconut oil

  • 200 ml warm water

Maple syrup for added sweetness (I do 3 capfuls don’t need too much)

Mix all of the above into a big mixing bowl and mix until you get to a biscuit dough like consistency.  Then take an energy ball sized portion – roll it into a ball and then squash it into a biscuit / cookie – add to a baking tray. You should be able to make approx. 20 cookies with the above.  Bake for 8-10 mins in a 180 oven.

Banana Oat and Chia (and anything else goes) Cookies

Tasty and simple to make, you can add nuts, seeds, raisons, dates to this mixture to continually reinvent the basic recipe and flavour.

  • Two ripe(ish) medium sized bananas.

  • Two tablespoons chia seeds.

  • Two tablespoons coconut oil

  • 200 grams of raw oats (or any oats work)

  • Optional: A splash of maple syrup.

And add a handful of anything else you wish to add – 8 chopped dates, handful of raisins, chopped hazelnuts, 8 chopped apricots, coconut, raw cacao nibs or even dark choc chips. You can play with anything that goes with ‘banana’.  

Mash your bananas and mix in the chia seeds and oats – this should be a pretty dryish consistency.  Boil the kettle and pour hot water into regular cup ¾ of way and then add your 2 tablespoons of coconut oil and mix. Then start to add the oil/water slowly to the oat mix – until you get that sticky consistency where the mixture starts to come together and you can mould into balls and then flatten onto a greased proof paper baking tray. (Or lightly coconut oil greased baking tray).

Pop in the oven at 180 – and allow 8-10 minutes. Check them to see if they need another minute or so. And that’s it.

 PS: I like to add coconut oil to my hands before I create the balls and flatten them down into cookie shapes. It stops the mixture sticking to your hands – and gives you a nice little hand massage at the same time! Bonus.
